~my special version of pumpkin soup~
RED HOT ROOT SOUP
cut up pieces of pumpkin, carrots and sweet potato....however much you have....maybe more pumpkin and less carrots so it's creamier..up to you
cut up onion or two. very finely cut up/process a chilli or use chilli paste, etc.you could add garlic - i don't think i have yet.
fry up onion/chilli with olive oil in a large saucepan until soft. add the vegies.
add some VEGETABLE stock (i like the 'massel' brand powder

) - enough so that the vegies are just covered. put lid on and bring to boil. turn down to simmer. wait until vegies are soft. add a rinsed can of cannelli/butter beans. puree/process soup until smooth. check temperature and serve with a dollop of cream on top and sprinkled dried parsley or a sprig of fresh for garnish, and some sort of bread. enjoy!
