Today I had the BEST cake I have ever had (I kid you not!) and I am going to make it with the kids this weekend but thought I would share the recipe 
Yoghurt Cake
125g butter
1 cup sugar
3 eggs
2 tablespoons vanilla essence
300g of vanilla (or another flavour) yoghurt (I had vanilla today but will be making with banana flav)
1 1/2 cups of flour
2 teaspoons baking powder
icing sugar
Melt butter in a saucepan large enough to mix all the ingredients in.
Remove fron heat and mix in sugar, eggs, vanilla essence and yoghurt until combined.
Sift flour and baking powder together and mix with a wooden spoon into the saucepan until combined.
Line a 20cm round (we used loaf) cake tin and bake at 180 degrees C for 55 minutes or until cake springs back when lightly touched.
Cool a little, sprinkle with icing sugar and serve warm... yummo!
