Baked Pumpkin Risotto (Veggie/Vegan )

Great meal for babies and grown ups

Onion - chopped v finely
Garlic (we like lots)
Pumpkin (maybe about 1/2)
Aborrio Rice (a cup)
Veggie Stock (2 cups)
Olive Oil for frying

Saute the onion and garlic in olive oil.
Add rice to frying pan - stir until each is pearl looking (coating in oil)
Transfer everthing to a oven proof dish, add stock.
If your pumpking isn't precooked add now. We pre roast the pumpkin and then add it at the very end.
Cook in oven (with lid) at 200 for about 15-20 mins. If too dry add some more stock, if too moist cook a little longer without the lid.

Add some green veggies as required (eg cooked peas, wilted spinach etc)

Serve with some parmesan cheese (except if you're vegan).

You can freeze it but it's a bit mushy when it defrosts.

It's a great meal when you don't feel like standing over lots of saucepans and you want to cook a meal that your baby and you can enjoy together.

Today I had the BEST cake I have ever had (I kid you not!) and I am going to make it with the kids this weekend but thought I would share the recipe

Yoghurt Cake

125g butter
1 cup sugar
3 eggs
2 tablespoons vanilla essence
300g of vanilla (or another flavour) yoghurt (I had vanilla today but will be making with banana flav)
1 1/2 cups of flour
2 teaspoons baking powder
icing sugar

Melt butter in a saucepan large enough to mix all the ingredients in.
Remove fron heat and mix in sugar, eggs, vanilla essence and yoghurt until combined.
Sift flour and baking powder together and mix with a wooden spoon into the saucepan until combined.
Line a 20cm round (we used loaf) cake tin and bake at 180 degrees C for 55 minutes or until cake springs back when lightly touched.
Cool a little, sprinkle with icing sugar and serve warm... yummo!

Banana Sour Cream Bread - Allrecipes

Did this one for the 2nd time today - very very nice - but you need at least 2 breadtins for the mix - one's gone already the other in the freezer
