NC Cupcake Cooking Quest WEEK 2

~~Red Velvet~~

**This is the basic recipe for the week BUT let your imagination go wild with fillings and frosting ideas..........Cupcake recipe is a must but the frosting recipe is optional**
Red Velvet cupcakes
INGREDIENTS
¾ cup butter, softened
1½ cups castor sugar
¼ cup cocoa powder
1 tsp baking soda
1 tsp salt
1 tsp vanilla extract
2 large eggs
1 cup buttermilk
2 Tbsp liquid red food color
2 tsp white vinegar
2 1/2 cups cake plain flour

Icing
2 bricks philly cream cheese, softened
½ cup butter, softened
1½ cups castor sugar
1 tsp vanilla extract


Just like before, the rules are the same.

You have until Saturday 13th December to post your photos and then the next recipe will be given on Sunday morning the 7th December The winner of the voting poll will be responsible for getting the weeks recipe up first thing Sunday morning

I will set up a poll sometime on Sunday (14th dec) so we can all vote to to determine the winner for the week

Is that quantity right? That seems like an awful lot of food colouring

Just put less in, they won't be as red but that won't matter

the amount of food colouring gives it a deep red look, but like wems said, if you want them to be lighter, just put less in. Queens make a natural food colouring, it comes in the little box.

LOL, you'd need about 4 boxes of the natural ones to make that much (and it's more a pinky red than red-red). You'd need a lot of red to counteract the cocoa.

OK, so red food colouring is on my shopping list today & the girls are super excited about having red cupcakes this week

I use a pwdered red from the cake deco store, that wa I can use a little less, fo that deep red look.

Yes I would agree with Cathy - the powered food colour makes the colour deeper without affecting the consistency of the mixture.
