ok so I know I haven't been here for awhile ... just got the reply in my inbox and drooling over cupcakes

I have made up a recipe for reese's pb cups cause I was craving them one day.... I wonder if I can remember it.
Although basically it was just chocolate + a little peanut butter, and the peanut butter filling was peanut butter, plus a little butter, and crushed cruskits biscuits. layer the peanut butter mixture in between 2 chocolate layers in some cupcake papers.
they weren't exactly like the reese's ones, but they tasted really good

Is your frosting something like this Lesley???

FROSTING:
2 c. packed brown sugar
1 c. butter
1/3 c. milk
3 c. confectioners' sugar, sifted
1 tsp. vanilla extract
Put brown sugar, butter and milk in a saucepan and bring to gentle boil. Stir until butter melts, sugar dissolves and mixture is smooth. Pour hot mixture into a bowl and gradually beat into confectioners' sugar and vanilla until smooth. Frost cooled cake. If frosting gets crusty beat again.

Just want to thank Lesley for her recipe and this motivational thread about nothing but cupcakes! I made some for Matthew for his kinder 4th birthday cake, and think they worked reasonably well. Great to have a recommended recipe, when it's been sooo long since I last made them.

The kids seemed very impressed when they saw them - I think they were all a little excited. I must say I struggled with making anything but carrot cakes because I want to encourage them all to eat well, but couldn't be bothered finding a good recipe in the end. Plenty of time for that!

Sorry Wems, my back is still giving me grief and I can't really think straight

But here you go, this is the one from the crabapple cookbook - it's a lovely book, well worth getting, especially since it's Aussie and the ingredients are easily available.

Combine

1006 butter, 2/3 cup brown sugar, 1/4 cup golden syrup, 1/2 cup cream in a heavy based saucepan over medium heat. Stir until the sugar is dissolved then boil for 5 minutes. Cool to room temp.

Add 4 cups of sifted icing sugar and beat until light and fluffy, then beat in another 4 cups of icing sugar. You may need to add more cream if it's too dry or icing sugar if too wet.

I found 8 cups icing sugar a bit much, but you can adjust to suit. Makes heaps of frosting and it keeps well in the fridge.

Funny story - I gave the recipe to a Learning Ladder lady at a recent get together and she made them for her son to take to school - he goes to a school that has day kids and boarders. Apparently he was selling them for $2 a cake - even stole the ones from his brother's lunch box when his ran out to sell to more kids So she made another batch for him to take so the whole class got one lol!
