no, no blanching Tanya. (I don't anyway)
Just chop and freeze, then add them frozen to whatever you're cooking.
Still haven't really had luck with spuds tho (see PPs)

you can freeze mashed spud theoretically lol, but havent tried it apart from on shepards pie which i dont eat - but no complaints...
ive got a big bag of unblanched zuchini in my freezer now - once its abit cooler i will just make soup
oh i often freeze pureed fresh veg for rissoles/patties....

oh yes mashed spud I have, yep and I think somewhere in this thread I posted on that - it does reheat fine, but I personally think it tastes a little more... ... floury? ie on top of shep pie, leftovers from dinner etc No one else seems to taste the difference tho so...

but sliced/julienned/diced, no I haven't had luck with that (yet).
