Default freezing vegies

I am noticing how we are not using all our vegies while they are fresh and healthy. I try to buy less and shop more often but it is difficult with our timetable and I also go shopping and all the yummy vege entices me and I buy heaps

so I'm thinking I might start freezing some myself. I have read that they should be blanched first to stay fresh etc. Does anyone else freeze vege? I feel a little lost as to what to do

If I can get it happening then we might start growing some ourselves too, I love eating beans straight from the plants

Kristy (Mumto4) is the vege freezing guru....I'm sure she'll be along. I'm freezing a few bits and pieces currently. We also have vege's growing. Not a single snowpea made it to the kitchen though! Miya checked the plants very thoroughly every day

Tanya I don't blanch anything and they're just fine when used in cooking

only thing that hasn't worked for me so far is potato, Kristy has tried too but I cna't remember the outcome...

I just chop and put in ziplock bags/containers and take out as I need it!

how long do you leave them for Tracee? I'm sure I would use them within a week or two

Til they're all gone LOL

I buy what's in season and hence at great prices at the markets and chop and freeze. I think vegies can be kept in the freezer for 9months? I think the longest anything's stayed in our freezer is 3 months.

i did potato and it was soggy but cooked up ok.

I have done potato blanched or partly-fried in olive oil, cut into chips & frozen, then oven-baked when I pull them out. I don't think it keeps for as long as other vegies, though.

I think the other threads on freezing vegies are in the VIP section.

Joh had some links for freezing chips, I tried one of them recently & it worked well. Chop into shape, coat with oil & cajun seasoning, bake for a bit, freeze flat on the baking tray, then tip the frozen chips into a container. Tasted yummy when reheated a week later.
