pear and zuccini (sp? lol) muffins - suitable to freeze can get recipe if you want

also Brooke does sliced zucc (alter to fit your food req), dipped in beaten egg then rolled in a mix of breadcrumbs and bush spices and herbs, then quickly browned in the pan... I salt it when I have it and I'm not a big zucc fan but I like it this way.

You can also dice and freeze it no probs at all (for later inclusion in pasta, lasagne, pies, stews, casseroles etc etc)

I was also going to suggest muffins, or frittatas. They make great snacks, especially if you make them in mini muffin tins.

We eat a lot of omelettes too, as DH gets a hot lunch at work so he doesn't always need a big dinner. A cheese omelette with grated zucchini inside is popular with everyone in our family.

You can also put them on pizza of course, and then something I've always wanted to do is make antipasto veges such as zucchini and eggplant, by chargrilling them then bottling them in olive oil or vinegar. Don't ask me how to do that, but you could look it up if you are feeling like some good wholesome housewife activity!

I grate zuchinni and carrot up and put them into most of my mince dishes ie pasta bake, lasagne, savoury mince etc. They are also pretty good in omlettes.

i grate zucchini into EVERYTHING, especially sweet muffins and the like, kids (and DH) don't have the foggiest they are getting a bit extra veg into their diet!

I never thought of putting it in sweet cakes and muffins, etc.... hmmm, might have to try that next time!!

Oh, Mum and I created this yummy scrummy snack we used to cook (sometimes for lunch or something) that had thinly sliced zucchini, corn kernels, diced onion and diced bacon - all fried up with..... you'll never guess!! Italian salad dressing!!! You just saute it all and then add the salad dressing almost at the end and it adds the most amazing tang!! I do like vinegar-y flavours, though!!

Oh yes, in sweet cakes is good! A friend makes zucchini & walnut bread (cake), which is really similar to carrot cake and very yum!

I have a recipe for cinnamon zucchini bread somewhere that's yummy and freezes well ... can't find the cookbook but I'm sure there's something similar online
