Default glut of zucchinni - help

my mum keeps giving me MASSIVE homegrown zucchinii have some in the freezer, i keep making zuchinni slice/quiche - just made a lot of corn/zucchini soup - what else can i make?!

I was going to suggest zucchini slice and soup... so I'm all out of ideas!

Ask your mum to pick them smaller? They are much yummier that way.

We use zucchini heaps in lots of dishes... chopped up fine (or grated) and added to spaghetti bolognaise, curry stew etc.

Other than that, I love zucchini and potato soup (with milk and a little cheese). The kids all love it because it is so creamy.

We also love it just sliced on the bbq with some nice seasoning (and not overcooked).

My favourite is zucchini and bacon slice which everyone loves hot or cold and the kids like to have it in their school lunches.

Hmm... I don't use recipes, so I'll just have to tell you what I do


Creamy Potato and Zucchini Soup

Cut up one "normal" size zucchini and 3 big potatoes (or about 6 smaller ones) and a medium onion

Lightly fry in a few desertspoons of butter

Add seasoning of choice (a decent sprinkle of vege stock powder will work)

Pour in a few cupfuls of water and a couple of milk

Simmer for a long time

Blend until creamy

I then taste it and add extra cream or sometimes evaporated milk if neccessary. Sometimes I even add a can of coconut milk. Add extra seasoning now if it tastes like it needs it.

Stir through some grated cheese

Serve hot... Yum!

Grind black pepper on top (and salt if you are a salt addict )

Serve without pepper for little kiddies and with extra grated cheese on top. They love it this way.
