I get the bread mixes from the supermarket & make it by hand. When the weather's cool I turn the oven on the lowest heat to 'prove' it, when it's really hot I sit it in the car. The smell & taste is just sooo much better than the bought stuff and cheaper too

Do you have any suggestions for white and wholemeal flour alternatives? DH's herbalist has given him a guideline for what he should/shouldn't be eating. White bread and wheat germ are the avoidance list. So, any ideas? We make our own bread and I am not going back to buying bread!

I was thinking of trying spelt. Where would I buy spelt from?

My MIL suggested sour dough, but if it is made with white flour then would it be a no as well?

I used to make my own bread a lot but don't get time at the moment. I have a fantastic bread booK called "The Beginner's Book of Breadmaking" by Diana Dasey.

There is one in the "friendly food cook book" I don't think it has white wheat but it does have potato soy and a few other flours i think.

Are there any other restrictions on what he can and can't eat

He does have a few 'restrictions' but not major ones. Did I say that this was from having a hair tissue mineral analysis done?

He should avoid refined carbohydrates and sugars. Under the refined carbohydrates it says white bread, cakes and pastries. I wish I'd been with him because then I could have asked if that included homemade white bread because it is completely different to the bread you buy in the supermarket!

He was given a list of allergy foods to be avoided, but they are mainly berries, greens, peanuts, cocoa and wheat germ.

He can have cereals and whole grains.

I would suggest that this means any processed foods - white flour, sugar etc. In their raw state he should be fine.
Spelt flours are available from health food stores quite readily now and are much less refined than wheat.
You can make your own sourdough culture by using wholewheat flour or spelt instead if white.


How much can you reduce the sugar by Ali? Can you halve it successfully?

I keep meaning to make it by hand as an activity for Felicity but haven't yet.

Bec- I think I remember reading on another thread you've got a Breville Ultimate don't you?? I'm saving for a bread machine because I had to leave my previous one at mum's - she wouldn't let me take it and i haven't made bread since!!

Carmen, thanks for your reply. I made the amish bread recipe yesterday and halved the sugar and I thought it worked well.

Thanks for that info.. I made it with about 90g of sugar and it's currently proving in the oven....

Never made bread by hand before.....if it doesn't work, I'm going back to my beloved bread machine!
