Isn't it just by adding a tsp (not sure of qt's) of baking powder?

2 teaspoons of baking powder to 1 cup of flour. Sift it together a couple of times to mix it really well.

I use it all the time as I cook with Spelt flour and only ever buy the plain flour. It has always worked well for me.

awesome thanks Carmen, Rah and Nic - we have a heap of spelt flour here (well, it was sold as 'seconds' with proceeds to the school because they couldn't guarantee it was organic spelt or something I can't remember and it makes not much sense to then go buy SR when we have a whole BAG, the old style stitched bags of it, here).

Other than that I just buy organic where I can or what's on special depending on the week, at the shop so we don't always have spelt/organic/wholemeal.

Thanks for the info ladies! (thanks Kat too) Brooke is on a baking (and now sifting!) mission! One batch sultana scones, the other batch cheese and herb mmmm hot with butter!

Coming in a bit late, but yeah, what the others said.

I stopped buying SR flour a few months back, & just buy larger amounts of plain flour. Lets me buy flour in bulk without the risk of the SR flour loosing its 'rising ability'.
