    Default another dinner thread - potato

    DH really likes his meat and 3 veg.. I am much more a stirfry or curry person myself...

    I really find it hard to think of new and interesting things to do with potato.. other than baking, mashing or potato bake.. I am out of ideas...

    how do you do your taties when you want something a bit diferent.. ps its Silverside for us tonight with cheesy white sauce..

    Well you can bake or microwave the potato in it's skin then scoop out the middle and mix cheese, spring onion, herbs, ham (if you are into that) capsicum,corn - whatever you like with some sour cream or cream or milk then scoop back into the potato and cheese on top into the oven or under the grill - yummo they can actually be a meal on their own

    Chips - I cut them up, microwave them for a little then throw them in the frypan with a little bit of spray oil and some chicken salt.

    Roasted.

    Maybe a warm potato salad?

    Personally I don't think I'd ever get tired of mashed spuds.

    Boil/steam them until they are a little soft, but not quite mashable IYKWIM. Then throw them in the frying pan with some olive oil and either

    1. cracked pepper, sea salt & rosemary (fresh or dried) or

    2. 1 tsp cumin seeds, 1 tsp coriander seeds, 2 tsp mustard seeds, 1/2 tsp turmeric, 1 small chopped chilli and a squirt of lemon juice.

    Flip them around in the frying pan for a while until they are golden and crunchy.

    You could also experiment with your baked potato toppings, maybe a nice homemade salsa of tomato, avocado and onion with a squirt of lime/lemon juice.

    Potato bake is always a winner with my DH. I just slice up the potatoes, layer them in a dish and make up a mixture of 1/2 milk and 1/2 cream and add a teaspoon of mustard powder per 500 mls. You can also add bacon pieces if you like. Top with cheese and bake.

    or mash it with lemon juice, fresh crushed garlic and if you like, olive oil. i don't, so i leave this ingredient out. it's sooo yummy (it's a greek dish, i can't remember the name tho)

    We also like to just dice them up into about 1cm cubes (can do skin on or off) and chuck them in a baking dish and toss with oil, salt and freshly chopped garlic.

    Bung in the oven and leave it for an hour or two, pulling out occasionally to gently mix them up a little and check.

    They are done when they are all soft in the middle and some are going golden and crispy... yum yum!

    Hasselback potatoes ~ Cut a thin slice off the long side of a potato so it sits flat, then make heaps of thin slices not all the way through, brush with oil/butter & seasoning of your choice & roast until cooked.

    Janssen's temptation: pretty much a potato bake, but cut the spuds into matchsticks & layer with softened onions, pour on the cream/milk & top w cheese.

    Potato omelette ~ fry up garlic & onion, add semi-cooked potato cubes, them pour on egg mixture.
