    Default Fudge recipes

    We went to Montville yesterday and bought a yummy selection of fudge, which I always do whenever I see a fudge shop

    I really want to make my own. Got any recipes you'd like to share?

    i've lost my plain fudge recipe (day to day cookery from high school! fabulous recipe book)

    Thanks Bron. I found that one yesterday but got confused- what's Oleo? I'm guessing it's a kind of fat/ lard. Wondering what I could substitute.

    naturally enough, i had to search for the cookbook, and i found the chocolate slice recipe! yay!!!

    this is the closest i could find to the one i used to make. i put all the ingredients in together tho, and use a wooden spoon to beat

    Old-fashioned Fudge

    2/3 C milk
    1/3 C cocoa
    2 C sugar
    dash of salt
    1/4 tsp. cream of tartar
    1 tsp vanilla

    Mix milk and cocoa in pan over low heat until cocoa is dissolved.
    Add sugar, salt and cream of tartar. Cook and stir over medium
    heat till soft ball stage. Remove from heat.

    Add 2-3 Tbls butter or margarine. Let cool till butter is melted
    (or a little longer if you want). Add vanilla. Beat with electric
    mixer until it starts to set up. Pour into buttered pan and let
    cool.

    argh see the only thing i dont have atm is cream of tartar bugger will have to see what other recipe's i can find it sounds so yummy too

    to tell if it is soft ball stage, have a cup of water (cold) and a teaspoon ready, and drop a little of the mix into the water. if you can mould it into a ball with your fingers, it's soft ball and then you get to eat it

    if you're like me, you'll start checking for soft ball way too early

    leaving it longer will give you various other stages, all the way to hard crack

    health hint

    make it with rice milk, rather than cows' milk. you can't taste it, and it has lower fat. (you could use skim milk but yuck!)
